Quattro Stagioni Pizza (Four Seasons Pizza)
Quattro Stagioni is a classic Italian pizza that represents the four seasons of the year. It’s divided into four distinct sections, each with different toppings:
- Spring: Artichokes
- Summer: Tomatoes or basil
- Autumn: Mushrooms
- Winter: Ham or cured meats
The idea is that every bite offers a mix of flavors while still keeping each topping separate. Traditionally, it’s made with a thin, Neapolitan-style crust, fresh tomato sauce, and mozzarella.
Ingredients (for 2 medium pizzas)
For the dough:
- 300 g (2 1/2 cups) all-purpose flour
- 200 ml warm water
- 1 tsp sugar
- 1 tsp salt
- 1 tsp active dry yeast
- 2 tbsp olive oil
For the topping:
- 200 g mozzarella, shredded
- 100 g cooked ham, sliced
- 100 g artichoke hearts, quartered
- 100 g mushrooms, sliced
- 50 g black olives, pitted
- 200 ml tomato sauce
- Olive oil for drizzling
- Salt and pepper to taste
Instructions
- Prepare the dough:
- Dissolve yeast and sugar in warm water; let it sit 5–10 minutes until frothy.
- Mix flour and salt, then add the yeast mixture and olive oil. Knead until smooth.
- Cover and let rise 1–2 hours until doubled in size.
- Preheat the oven:
- Preheat to 220°C (430°F).
- Shape the pizza:
- Roll out the dough into a circle (about 25–30 cm / 10–12 inches).
- Spread tomato sauce evenly over the base.
- Add toppings in four sections:
- Divide the pizza visually into four quarters.

- Sprinkle mozzarella evenly across all sections.
- Bake:
